The present invention is a process for the production of isomaltulose comprising the steps of A) contacting an immobilized enzyme complex, which is able to catalyze the conversion of sucrose to isomaltulose, having a sucrose-containing solution; B) isomerizing at least a portion of the sucrose to isomaltulose; C) separation of the enzyme complex, and optionally D) further purification of isomaltulose, characterized, that as a sucrose-containing solution is at least one selected from the thick juice or thin juice, thick juice, preferably, is employed.
