Variation of cell wall component during pear growing process

【Objective】The variation trend of cell wall component in fruit was analyzed during fruit growth in order to provides theoretical bases for improving quality of fruits.【Method】The ingredient of cell wall was extracted in these varieties which Nijyuuseiki,Kousui and Cyoujyuurou using Rouse A H method.In addition,the content of lignin,cellulose,hemicellulose and pectin were measured by various methods.【Result 】The result suggested that the content of lignin were increased at first and then reduced in the growing process of fruit.However,changes in cellulose and hemicellulose were not significant through the whole period of this study.Above all,water soluble pectin was elevated,and EDTA soluble pectin was gradually increased in early growing period; the increement of growth was higher in the Nijyuuseiki compared with the other varieties.Na2CO3 soluble pectin was obviously ascended in the process of growth and development of three kinds of pears.【Conclusion】The results indicated that lignin was closely associated with the ripening and softening of the fruit,and water soluble and Na2CO3 soluble pectin was positive correlation with the ripening processing of fruit.
