Analysis of volatile compounds in beer by comprehensive two-dimensional gas chromatography/time-of-flight mass spectrometer

Volatile compounds in beer was analyzed using comprehensive two dimensional gas chromatography/time-of-flight mass spectrometer(GC×GC/TOFMS).In total, more than 300 compounds in beer were identified with good match and similarity and reverse number over 750 ~ 900.The main volatile compounds in beer were detected by this method,, such as Hexanoic acid, ethy1 ester /3-Buten-1-one, 4-[2,6,6-trimethyl-1(or2)-cyclohexen-1-yl]-/ Cedrol/ Phenylethyl Alcohol/ Benzyl Benzoate/Limonene/Pinene/1,3,7-Octatriene, 3,7-dimethyl-/2-Buten-1-one,1-(2,6,6-trimethyl-1, 3-cyclohexadien-1-yl)-,[E]- /Octanoic acid, ethyl ester /Decanoic acid, ethyl ester/ Tetradecanoic acid,ethyl ester/ Pentadecanoic acid, ethyl ester / Acetic acid, 2-phenylethyl ester/ Benzoic acid, butyl ester / Naphthalene, 1-methyl-/ Benzenepropanoic acid, ethyl ester / Butylated Hydroxytoluene /Phenylethyl Alcohol / 1,6,10-Dodecatrien-3-ol, 3,7,11-trimethyl-,[E]- /Tetradecanoic acid, ethyl ester / 2(3H)-Furanone, dihydro-5-pentyl- / 2-Propenoic acid, 3-phenyl-, ethyl ester ,etc..(fig1) In classical methods, the beer sample was also quantified by one-dimensional gas chromatography-mass spectrometry (GC/MS),and we find about 30constituents.The results showed that we can obtained more volatile constituents by GC×GC-TOF/MS than GC/MS analysis methods. The results is very useful for disclosing the relationship between components and the aroma of beer, and helpful for beer data base to controlling high quality products.
