Studies on enhancing mushroom flavor by sunflower seed oil.

Effects of sunflower seed oil on the formation of mushroom pulp flavor were studied.Results showed that aroma of fresh mushroom was strengthened more than that of dry mushroom by sunflower seed oil.The strengthening conditions of sunflower seed oil: holding time 40min,reaction temperature 30 ℃,sunflower seed oil 0.4%.Adjustment of its taste: salt 4%,Sugar 2%,MSG 0.5%;I + G 0.3%.
