Abstract This chapter discusses the transformation of chitin isolated from marine-based sources to final market products. It discusses the diverse applications of chitin and Chitosan in areas such as medicine, pharmaceuticals, food industry, water purification, and cosmetics. The economic prospects of exploiting this biopolymer are also discussed in detail.
