Some aspects of the preparation of chitosan

Abstract The process of alkaline deacetylation of chitin as a function of the concentration of alkali, temperature and reaction time has been investigated with study of the influence of the content of the protein and mineral substances in the chitin on the viscosity of the solutions of chitosan formed.
