Preparation method of dual antibacterial emulsion gel

The dual antibacterial emulsion gel is prepared by reacting a cinnamyl aldehyde oil-in-water emulsion as a crosslinking agent with a chitosan liquid. The bacteriostatic activity of the emulsion gel prepared by the method on escherichia coli and staphylococcus aureus is superior to that of single chitosan and cinnamyl aldehyde; the dual antibacterial emulsion gel does not contain an organic solvent, is mild in preparation condition, relatively safe to use, stable in quality, and relatively long in storage life, and can be widely applied to corrosion prevention and preservation of fresh fruits and vegetables and foods.
