Antioxidant Effect of Spice Extract on Peanut Oil

Antioxidant effect of three natural extracts of spice(rosemary,sage,clove) and gallic acid on peanut oil were studied by analysing peroxide value of oils.Results showed that four natural products exhibited different antioxidative activity in the oil,the best two were gallic acid and sage extract;the optimum antioxidantive effect of the compound antioxidants of sage extract and gallic acid was obtained with the mass ratio of 1∶4 and the dosage of 0.04 %.
