Abstract:
Excessive meat consumption, especially red and processed meats, is associated with increased morbidity and mortality. The pattern of meat consumption varies in Brazil and is influenced by economic and cultural factors in the world. The study aimed to analyze the consumption of meat by adults and the elderly in a city colonized by Germans in the south of Brazil. It involved a cross-sectional population study. Sociodemographic and meat consumption data were collected using a previously validated Food Frequency Questionnaire. Frequencies and amounts were analyzed by type of meat and processing. The association between excessive meat consumption and the study variables was estimated by Prevalence Ratio. Among the 1,941 participants, the average amount of meat consumed was 250 g/day, the most consumed being white unprocessed meat (138 g/day), especially poultry (80 g/day). The prevalence of excessive consumption of red and processed meat (more than 500 g/week) was 63%, mainly among men (PR=1.6; 95%CI 1.5-1.8), aged 20 to 29 years (PR=1.4; 95%CI 1.2-1.5), and higher economic class (PR=1.2; 95%CI 1.0-1.3). Excessive consumption of red and processed meat among young men of upper economic class should be the target of public health actions for the adequacy of food consumption.O consumo excessivo de carnes, em especial as vermelhas e processadas, está associado ao aumento da morbi-mortalidade. O estudo buscou analisar o consumo de carnes por adultos e idosos de uma cidade de colonização alemã do sul do Brasil. Trata-se de estudo populacional seccional. Foram coletados dados sociodemográficas e de consumo de carne por Questionário de Frequência Alimentar previamente validado. Foram analisadas as frequências, e as quantidades por tipo de carne e processamento. A associação entre o consumo excessivo de carne e as variáveis de estudo foi estimada por Razão de Prevalência. Entre os 1.941 participantes, a média de carne consumida foi de 250 g/dia, sendo a carne não processada branca (138 g/dia) a mais consumida, com destaque para as aves (80 g/dia). A prevalência de consumo excessivo de carne vermelha e processada (mais que 500 g/semana) foi de 63%, principalmente entre os homens (RP=1,6; IC95% 1,5-1,8), de 20 a 29 anos (RP=1,4; IC95% 1,2-1,5), e mais alta classe econômica (RP=1,2; IC95% 1,0-1,3). O consumo excessivo de carne vermelha e processada entre homens jovens de classe econômica alta deve ser alvo de ações de saúde pública para a adequação no consumo alimentar.Keywords:

Red and processed meat (RPM) consumption associates directly with several unfavorable health outcomes and with environmental impact of diet. RPM consumption differs between certain population groups, and moreover, encompasses various subjective meanings. Literature on determinants of subjective importance of meat in diet (SIM), however, is scarce. Aims of this study were to determine which sociodemographic and -economic characteristics associate with SIM and RPM consumption. The study was based on the FinHealth 2017 Study. The sample comprised 4671 participants aged 18–74 years. SIM was asked with a question including five response options from "not important at all" to "very important". Habitual dietary intake including RPM consumption was studied with a food frequency questionnaire. RPM consumption level grew in parallel with SIM categories. RPM consumption was high and SIM prevailing in men, those living in rural areas, and those with low education. Women living in household with children consumed more RPM than other women but did not find meat more important. Conversely, men living in household with children found meat more important but did not consume it more than other men. Domain analyses considering individuals within the highest RPM consumption quintile revealed that the oldest age group found meat significantly less important than the youngest group. In order to be able to lower RPM consumption at population level and to move towards healthier and climate-wiser diets, it is important to identify subgroups that consume much meat but also subgroups that find meat especially important. Such dietary transition may be especially challenging to subgroups that consume much meat and also consider it important. Actions to support the dietary transition in different population groups should be developed.

In recent decades, meat consumption patterns have been changing. This study investigates the main drivers of white and red meat consumption in crisis regions based on microeconomic theory, hegemonic masculinity theory, meat paradox theory, and nutrition transition theory. A quantitative questionnaire survey was conducted in Sulaymaniyah city in Iraqi Kurdistan in 2018. Data from 233 respondents were collected. Multifactorial linear regression analysis showed that the main drivers in the consumption of white meat and red meat are similar: higher income and preferences for the taste of white or red meat have a statistically significant, positive effect on meat consumption. Men consume white meat more than women. The consumption of red meat decreases when the respondent is concerned about the fat content of meat and animal welfare awareness does not have a statistically significant effect on the consumption of either type of meat.

Using Spain as a case study, we analyze the evolution of meat consumption from the 1950s to the present. A meat consumption database was constructed using four sources: the FAO, Ministry Balance Sheets, Household Budget Surveys and the Food Consumption Panel. The study has two main contributions. First, we question the idea that meat consumption in Spain has been increasing steadily since the 1950s, as some economic historians have reported. Second, we identify two different food consumption models. The first is characterized by an increase in standardized meat consumption and the second features decreased meat consumption alongside a rise in the consumption of processed and prepared meat.

The economic and political crisis experienced by Brazil, together with the COVID-19 pandemic, may have negatively impacted the food consumption of Brazilian families over recent years. This study aimed to analyze trends in food consumption among adults in a Brazilian northeastern state. This was an epidemiological study which involved the analysis of data from the Food and Nutrition Surveillance System (SISVAN) relating to the food consumption of adults (20–59 years-of-age) in the state of Ceará in 2015 and 2020. Data are presented by frequency distribution. In the year 2015–2020, the food consumption of 14,840 adults were registered in SISVAN. There was evidence of a decline in the habit of having three main meals a day (−63.5%), mainly among women (−67.9%). Between 2015 and 2020, there was a decline in the consumption of beans (−7.4%) and an increase in the consumption of fruits (68.2%) and vegetables (82.9%). When considering ultra-processed foods, there was a significant increase in the consumption of hamburgers and sausages (83.3%), cookies (39.1%) and sweetened beverages (25.5%). Our findings indicate that the habit of having three main meals a day decreased between 2015 and 2020 in the adult population of Ceará, as determined by public data available in SISVAN, especially among women. In addition, there was an increase in the consumption of ultra-processed foods. Therefore, health interventions aimed at nutritional education and the fight against hunger are essential to face these challenges that affect society.

Close economic ties encourage production and trade of meat between Canada, Mexico, and the US. Understanding the patterns of red and processed meat consumption in North America may inform policies designed to reduce meat consumption and bolster environmental and public health efforts across the continent. We used nationally-representative cross-sectional survey data to analyze consumption of unprocessed red meat; processed meat; and total red and processed meat. Generalized linear models were used to separately estimate probability of consumption and adjusted mean intake. Prevalence of total meat consumers was higher in the US (73.6, 95% CI: 72.3-74.8%) than in Canada (65.6, 63.9-67.2%) or Mexico (62.7, 58.1-67.2%). Men were more likely to consume unprocessed red, processed, and total meat, and had larger estimated intakes. In Mexico, high wealth individuals were more likely to consume all three categories of meat. In the US and Canada, those with high education were less likely to consume total and processed meat. Estimated mean intake of unprocessed red, processed, and total meat did not differ across sociodemographic strata. Overall consumption of red and processed meat remains high in North America. Policies to reduce meat consumption are appropriate for all three countries.

Abstract The present study aimed to evaluate the association of sociodemographic factors and lifestyle with the consumption of in natura or minimally processed (INMP) foods, ultra-processed foods (UPFs), and fruits and vegetables. This was a cross-sectional study conducted with 403 children, aged 4 to 7 years, from a retrospective cohort. Sociodemographic and lifestyle variables were investigated using a sociodemographic questionnaire. Food consumption was assessed by three food records. Bivariate and multivariate linear regression analyses were used to analyze associations. Children with lower income had a higher consumption of INMP foods and a lower consumption of UPFs. A shorter time spent at school was associated with a lower consumption of INMP foods and a higher consumption of UPFs. Children with more screen time and less educated parents consumed less fruits and vegetables. Unfavorable sociodemographic factors were associated with a better profile of food consumption according to the level of processing, except for fruits and vegetables. The longer time spent at school and a shorter screen time contributed to a healthier diet.

This study objective was to describe the distribution of food consumption markers in Brazil per sociodemographic characteristics and its evolution from 2013 to 2019. Healthy food consumption markers (regular consumption of beans, fruits, vegetables, and fish, recommended consumption of red meat, and never replacing meals with snacks) and unhealthy food consumption markers (regular consumption of sweetened beverages and confectionery and excessive salt intake) were studied for adult participants of the Brazilian National Health Survey. The prevalence of food consumption markers was estimated according to sociodemographic characteristics and compared to data of 2013 and 2019. Most of the population regularly consumes beans, fruits, and vegetables, they also follows the recommendation to limit red meat consumption, and never replaces meals with snacks. The percentage of people who regularly consume sweetened beverages and perceive their salt intake as excessive is relatively low. The distribution of food consumption markers was associated with sex, age, income, race/skin color, area of dwelling, and schooling level. From 2013 to 2019, the prevalence of most food consumption markers declined, except for the regular consumption of fruits and recommended consumption of red meat, that increased 8.5% and 18.5%, respectively, and the regular consumption of vegetables, which did not vary. Healthy and unhealthy food consumption markers should be monitored to evaluate the effect of healthy eating policies implemented in the country.
