Abstract:
The chapter describes applications of membrane processes in food processing (primarily dairy and beverage processing). The increasing call for healthy food from the diet- and fitness-conscious consumer has encouraged researchers to find alternatives to conventional heat treatments. Recovery of valuable bio-active products from waste effluent generated by dairy and beverage processing industries have been widely researched. Membrane science and technology offer a range of options for innovative product design and optimization. Membrane processes may support sustainable industrial growth by preserving energy, decreasing capital costs, and reducing environmental impact. The major challenges associated with membrane processing are membrane fouling and concentration polarization. Membrane fouling results in decreased permeate flux and reduces membrane shelf life. The development of novel cleaning procedures, anti-fouling membrane materials, and module design is ensuring advances in membrane application as a promising alternative for food and beverage processing.Keywords:

The fouling of reverse osmosis membrane was affected by the membrane own characteristics,water quality and operation condition.The study status on the effects of material,structure and module of the membrane,operating temperature,pressure,pH value,shear rate and water quality on reverse osmosis membrane fouling were summarized.It also indicated that,designing low pollution or pollution-resistant membrane and membrane modules,optimizing operation condition,adding water pretreatment and efficient membrane cleaning technology was the development direction of the reverse osmosis membrane technology.

Membrane separation is discussed and analyzed in this paper. The analysis reviews the basic principles, suggests approaches to design, and briefly discusses some of the membranes and equipment available. The potential for energy saving through the use of membrane separation is enormous compared with other separation techniques, particularly evaporation. The author describes the evaporative methods in some detail. The reverse osmosis system (RO) is also described. In lowerpressure ultrafiltration systems, the energy savings are greater using this option. RO may have advantages over evaporation in terms of product quality, and because RO is not a thermal process, it can be used to concentrate temperature-sensitive materials without loss of quality.

The full membrane process of ultrafiltration(UF) + reverse osmosis(RO) + adopts the up-to-date separation technology to make up water for boilers.Ultrafiltered water with high quality can provide the optimum protection for the RO membrane,and the substitution of EDI technology for the conventional mixed bed eliminates thoroughly the usage of acids alkalis and sewage drains.This system also has certain defects during the operation due to different water sources in every region,so modification for the system should be made accordingly.The actual operation result in the thermo-electric plant shows that the system after modification is reliable convenient and water quality can completely meet the requirements of boilers in water usage.

Membrane technology has bringed a revolution to dairy industry, and the reverse osmosis membrane technology has been approved to be an effecitive method to treat the waste-water in dairy industry. The advance of osmosis membrane technology in dairy industry was reviewed from the mechanism, the origin and characters of waster water, the merits and drawbacks, and the future trends were discussed.

Reverse osmosis membrane technology,a new and widely used separation technology arose in 1 960 s,is one of the most advanced separation technologies at present.Reverse osmosis is the inverse process of osmosis and is driven by pressure.In this paper,the background and the development of re-verse osmosis membrane technology are introduced,and its present research is mainly discussed,and its applications in sweater and brackish water desalination,pure water preparation,pharmacy and chemical industry wastewater treatment are described.Finally,the existing problems and future development trends are analyzed.
