Values for the ascorbic acid content in the tubers of nine potato varieties have been compared. The effects of different fertilizers have been studied. Location of plots throughout the province was considered. Changes in ascorbic acid content due to tuber maturity and storage time have been measured at regular intervals. The relative amounts of ascorbic acid in the stem and eye ends of tubers have been found. Effects of top-killers on the ascorbic acid content of tubers were noted. No relationship was observed between the ascorbic acid content and either variety or fertilizer. The highest values for ascorbic acid were obtained in August. Losses during maturity and storage were continuous and fairly regular. Top-killers produced no apparent effect on the ascorbic acid content of tubers. The eye end of the potato tuber contained approximately 20% more ascorbic acid than the stem end.

ABSTRACT Effects of two types of mechanical injury (wounding and bruising) on the ascorbic acid content of Belrus cultivar tubers were compared. Wounding involved cutting slices (1 mm) and strips (10 × 20 mm) and both slices and strips exhibited a highly significant increase (p < 0.01) in ascorbic acid following wounding. The largest increase (400%) occurred in slices after 2 days. Ascorbic acid decreased significantly (p < 0.05) in the bruised halves as compared with the unbruised halves. Maximum decrease in ascorbic acid (347%) of bruised tissue occurred after 2 days storage at 5°C. The unbruised halves appeared to synthesize ascorbic acid when compared with the controls, the maximum increase (144%) occurring after 2 days storage at 5°C.

Guinea pigs were given ascorbic acid orally in two doses; a low and a high dose. The tissue levels of ascorbic acid-2-sulphate was estimated in these animals after 15 days of feeding and a subsequent deprivation period of 15 days. The specific activity of the enzymes ascorbic acid sulphotransferase and ascorbic acid-2-sulphate sulphohydrolase was studied. During higher ascorbic acid intake, the activity of ascorbic acid sulphotransferase was increased, whereas ascorbic acid-2-sulphate sulphohydrolase showed a decreased activity. But when ascorbic acid intake was lowered or ceased, the activity of the above enzymes showed a reverse pattern. Possible reasons for the lack of antiscorbutic activity of ascorbic acid-2-sulphate in guinea pigs is discussed.

Legal Amazônia is located in the north and consists of the entire territories of the states of Acre, Amazonas, Rondônia, Roraima, Amapá, Pará, Mato Grosso, Tocantins and the portion of the state of Maranhão west of longitude 44 (Figure 1). 식품 가공방법에 따른 ascorbic acid의 손실정도를 알아보기 위해 순수 ascorbic acid 수용액과 식품 중 ascorbic acid의 함량이 높은 귤을 감마선 조사처리(1, 3, 5, 7 및 10 kGy)와, LTLT(63℃ㆍ30분), HTST(72℃ㆍ15초) 및 멸균(121℃ㆍ15분, 15 lb)조건의 가열처리 및 마이크로웨이브 처리 후 ascorbic acid의 함량변화를 살펴보았다. 1~10 kGy의 선량으로 감마선 조사한 ascorbic acid 수용액 및 귤에서의 ascorbic acid 함량은 각각 27.4~44.9% 및 6.9~21.9%, 가열처리는 22.5~36.8% 및 4.5~18.1%, 1~3분 동안 마이크로웨이브 처리시에는 23.1~47.4% 및 6.5~22.6%의 손실율을 나타내었다.
