Characterization of physicochemical and antioxidant properties of Bayburt honey from the North-east part of Turkey

Abstract:
The aim of this study was to determine the physicochemical properties, bioactive substance content, and microbiological quality of sixty different honey samples collected from twelve different regions of Bayburt, Turkey. The samples were analyzed for their sugar, moisture, total phenolic, total flavonoid contents, and water activity, conductivity, pH values and colour, antiradical activity, and DSC properties. As a result of physicochemical analyses, it was determined that the samples examined complied with the standard values defined in the Turkish Food Codex in terms of the parameters examined. The results of the study showed that the total phenolic content (219.43-768.82 mg GAE kg−1) , total flavonoid content (31.29-118.7 mg CAE kg−1) and DPPH (12.98%-94.79%) parameters differ widely among the honey samples. A principal component analysis (PCA) was applied to correlate the characteristics of honey with honey samples collected from different regions. This is the first comprehensive and original report about the physicochemical properties of honey produced in Bayburt, a region close to the Anzer region where the most expensive honey, Anzer honey, is produced.Keywords:

In this study, the phenolic and flavonoid content, as well as antioxidant activity of one-hundred honey samples of different botanic origin were analyzed. Eighty-six of these samples are originated from different regions in Kosovo, while the rest fourteen are imported samples that can be found in the Kosovo market. To determine the content of phenolics, flavonoids, and antioxidant activity (2,2-diphenyl-l-picrylhydrazyl (DPPH) and ferric reducing antioxidant power (FRAP)), spectrophotometric methods were used. Total phenolic content ranged from 25.76 ± 10.16 to 84.17 ± 30.14 mg GAE/100 g honey, total flavonoid content ranged from 1.11 ± 0.62 to 7.51 ± 3.75 mg CE/100 g honey, FRAP activity varies from 3.65 ± 1.96 to 22.39 ± 12.86 mg TE/100 g honey, while DPPH activity varies from 0.73 ± 0.34 to 2.61 ± 0.93 mg TE/100 g and 22.23 ± 7.82 to 66.92 ± 23.18%, respectively. Due to the correlation matrix, total phenolic content shows positive correlation in all honey samples (mean value of all samples, FRAP: 0.829 and DPPH: 0.804); and total flavonoid content shows also positive correlation within all samples (FRAP: 0.834 and DPPH: 0.813).

Background: Fruits residue may act as a source of environmental pollution by releasing nutrients or toxic chemicals in the soil as well as providing a platform for the reproduction of various disease-causing vectors. Thus, recycling fruit waste in pharmaceutical or agricultural sectors may be one of the options for their management. Because of these aspects, the present study was conducted to assess the total phenolic and flavonoid contents in methanol extract from the seed of most commonly consumed fruits in India and their antioxidant properties using 1,1-diphenyl-2-picrylhydrazyl (DPPH) assay. Method: The fruits were procured from the fruit shop corner and the seeds were separated manually. The total phenolic and flavonoid content in the methanol extract of seeds of test plants was quantified using standard methods. The DPPH scavenging potential of the extract was further evaluated. Result: The results of the present study showed that the extract of the seed of the test plant has significant amounts of total phenolics, varying from a minimum of 153.72 µg GAE/g to maximum of 344.20 µg GAE/g and flavonoids compounds, varied from a minimum of 118.7 µg OE/g to a maximum of 168.3 µgQE/g. The results further showed that the seed extract possesses DPPH inhibition potential (78.86%-87.39) and their IC50 ranged between 102.60 µg/ml-45.69 µg/ml. The DPPH activity also showed a strong positive relationship with the concentration of extracts and with total phenolic and flavonoid content. The present study suggests that the seed extract of the tested plant has a significant amount of total phenolics and flavonoids compound and possesses higher antioxidant activity. The individual phenolic compound should be identified for its commercial utilization and promotion.

This paper deals with the study of sugar in fruits jam of different brands available in the market of Bangladesh.Sugar is a biochemical parameter.The term sugar related to total sugar, reducing sugar and non reducing sugar.Amounts of reducing sugar, non-reducing sugar and total sugar of different fruit's jams available in Bangladesh were determined.The reducing sugar content of different jams ranges from 28.00 % to 60.30 %.The highest amount of reducing sugar (60.30%) was found in Nur mixed Jam and the lowest (28.00%) in Agrokomerc Pineapple Jam.The reducing sugar content of different jams ranges from 28.00 % to 60.30 %.The highest amount of reducing sugar (60.30%) was found in Nur mixed Jam and the lowest (28.00%) in Agrokomerc Pineapple Jam.The total sugar content of different jams ranges from 38.86% to 62.53%.The highest amount of total sugar (62.53%) was found in Nur Apple Jam and the lowest amount of total sugar (38.86%) was found in Agrokomerc Pineapple Jam.Non reducing sugar content of Jams was found in range of 05.33 % to 25.17 %.The highest amount of non reducing sugar (25.17 %) was found in Best Food Orange Marmalade Jam and the lowest (05.33 %) in Nur Apple Jam.The percentage of sugar was determined by using biochemical methods.

Reducing sugar content in potato is an important indicator of breeding,deep processing of high value-added.Reducing sugar content in potato tuber,not only affect their nutritional value,but also affect food flavor,processing technology and product quality.The reducing sugar in potato tuber was extracted by six different methods,and the reducing sugar analyzer and 3,5-dinitrosalicylic Acid(DNS) with spectrophotometry were used to analyze the content of reducing sugar.The results indicate that the accuracy of the fifth method which added ethanol when extracting reducing sugar was better than the other,and extending the preservation time of the extracted samples at the same time.Both analyzer and ordinary methods can determine reducing sugar in tuber.The reducing sugar analyzer,especially,can determine reducing sugar in tuber more convenient,rapidly and the recovery rate generally reached more than 99 %.So it is a better method to determine the reducing sugar content in potato tuber.

Flavonoids are compounds which act as antioxidants in both plant and human. These substances are found in reproductive tissues. Tobaccos expressing ORF of PRODUCTION OF ANTHOCYANIN PIGMENT 1 (PAP1 ) involved in flavonoid biosynthesis were used for investigating the flavonoid profiles and antioxidant activity of petals and compared to wild type (WT) tobacco. Approximately two months, the tobacco grown in a culturing room had produced flowers for harvesting. The petal tissues were extracted with the solvent of acidic methanol and water. These extracts were measured the specific wavelength of flavonoid derivatives by using a spectrophotometer. The petal extract of H7 line showed the highest content of all detected flavonoid subgroups. However the petal extract of transgenic line H5 and H7 had significantly higher levels of anthocyanin (pelargonidin) than those of the other transgenic and WT tobaccos. An antioxidant activity of the petal extract was evaluated by 2,2-diphenyl-1-picrylhydrazyl radical (DPPH • ) assay. An effective concentration of the extract which scavenged DPPH radical by 50% (EC 50 ) was presented. EC 50 of the H5 and H7 transgenic extracts was approximately two folds less than that of WT extract Therefore anthocyanin may highly affect on antioxidant activities.

We analyzed the main chemical components in middle leaves of the flue-cured tobacco in Enshi of the year 2008 and 2009.The results showed that the differences of quality suitable range index was little between 2008 and 2009.The average quality suitable range index are as follow: reducing sugar 27.20%-30.54%,total sugar 32.03%-36.30%,totalalkaloids 2.20%-2.76%,total nitrogen 1.66%-1.99%,the difference between the total sugar and reducing sugar 3.73%-6.88%,the ratio of reducing sugar to total alkaloids 10.29-13.35,the ratio of total sugar to total alkaloids 12.12-15.88,the ratio of reducing sugar to total sugar 0.81-0.89,the ratio of total sugar to total nitrogen 16.46-21.48,and the ratio of reducing sugar to total nitrogen 14.09-17.93.Compared with Guizhou,Shandong and Yunnan province,the chemical components and ratios in Enshi were at middle level,and the reducing sugar,total sugar,total alkaloids,the difference between the total sugar and reducing sugar,the ratio of reducing sugar to total alkaloids and the ratio of reducing sugar to total sugar were closed to Yunnan province.The chemical components and ratios of the flue-cured tobacco middle leaves in Enshi were harmonious,which meets the requirement of high quality tobacco leaves.

The most prevalent phytoconstituents of medicinal and aromatic plants are phenols and flavonoids, which are responsible for antioxidant activity. This study aims to determine the total phenolic content (TPC), total flavonoid content (TFC), and free radical scavenging activity of Calophyllum gracilentum, an understudied Calophyllum species with very limited information. The stem bark extracts were prepared and examined for TPC assay by Folin–Ciocalteu method, while the TFC of the extracts was determined using aluminium chloride colorimetric method and the antioxidant activity was evaluated by free radical scavenging activity using 1,2-diphenyl-2-pricrylhydrazyl (DPPH). The extracts showed methanolic extracts exhibited the highest TPC and TFC with the value of 1542.40 ± 0.0246 mg GAE/g extract and 451.70 ± 0.0003 mg quercetin equivalents (QE)/g extract, respectively. Meanwhile, DPPH scavenging activity data revealed that all extracts had IC50 values ranging from 44.17 1.26 g/mL to 162.61 2.24 g/mL, with the methanolic extract for C. gracilentum having the highest antioxidant activity with IC50 values of 44.17 1.26 g/mL. The TPC and TFC assays showed that C. gracilentum extracts possess a substantial to moderate phenolic and flavonoid content, while the DPPH free radical scavenging assay revealed that the extracts have strong antioxidant activity. The results demonstrate that C. gracilentum contains a high concentration of phenolic and flavonoid chemicals. These discoveries could have significant implications for the prospective use of these plants in traditional medicine and as natural antioxidant sources.

The change trend of pH-value of soil,and total sugar and reducing sugar content of tobacco leaves in Qujing tobacco-growing areas was analyzed in this study.The results showed that the content of total sugar and reducing sugar was 314.69 g/kg and 237.42 g/kg,respectively.The order of total sugar and reducing sugar content in different grades of flue-cured tobacco leaves was C3FX2FB2F.There was close relationship between soil pH-value and tobacco total sugar and reducing sugar content.However,it was not a simple linear relation.It was not good for sugar formation and accumulation when soil pH-value was too high or too low.

Samples of Sideritis libanotica subsp. kurdica (Bornm.) Hub.-Mor, often known as mountain tea, were gathered in Iraq and analyzed for their antioxidant and oxidant status, DPPH activity, total phenolic and total flavonoid contents. The plant's aerial parts were utilized for this purpose. The levels of antioxidants and free radicals were measured by Rel assay kits. The ability to scavenge free radicals was evaluated using the DPPH technique. Folin-Ciocalteu and aluminum chloride reagent are used. As a result TAS values of 7.934±0.179 mmol/L, TOS values of 10.626±0.275 µmol/L, and OSI values of 0.134±0.001. The total phenolic and flavonoid contents were found to be 129.75±2.37 and 111.47±3.15 mg/g, respectively. Furthermore, DPPH activity at 2 mg/mL was calculated to be 75.15±1.45 S. libanotica subsp. kurdica has been found to have antioxidant activity and is thus a viable natural antioxidant source in this context.
