A yeast comprising a DNA construct comprising at least one nucleic acid sequence encoding AFP, said yeast capable of expressing said nucleic acid sequence, present said DNA construct not being in the native yeast and comprising said DNA construct , in the following order: (a) a strong promoter active in the yeast, (b) an ATG start codon, (c) at least one nucleic acid sequence encoding a polypeptide AFP type III HPLC 12 having (i) the amino acid sequence of AFP type III HPLC 12 shown in Figure 1 or (ii) an amino acid sequence having a homology of more than 80% with the amino acid sequence of AFP type III HPLC 12 shown in Figure 1, with the proviso that a polypeptide having said amino acid sequence exhibits an activity of inhibiting ice recrystallisation of at least that of a polypeptide having the sequence amin oacidos of AFP type III HPLC 12 shown in Figure 1, said nucleic acid sequence in reading frame with the ATG start codon being.
