Obtención de azúcares fermentables a partir de inulinasas inmovilizadas por el método de sol-gel

The objective of this work was to determine the content of sugar reducers for the effect of the immobilized inulinase by means of the sol-gel method, which consists in the formation of solid nets composed by inorganic elements, and afterwards to determine the activity of the immobilized enzyme with substrate of inuline of Agave tequilana Weber var. Azul. With this, the existing conditions in operation were found to change, reducing times originated by the addition of acid that hydrolyzes inuline and the later neutralization with alkali.
