The invention relates to a preparation method of an enzyme-containing compound probiotic plant ferment able to improve gastrointestinal functions. The method includes: taking malt, rice sprouts, hawthorns, dried tangerine peel, finger citron, coix seeds, white hyacinth beans, Gorgon fruits, radish seeds, sharpleaf galangal fruits and the like, adding water to conduct soaking, and performing extraction, subjecting the extracted solution to conventional thermal reflux compulsory circulation, adding brown sugar and peptone, carrying out blending, sterilizing and filtering, thus obtaining the filtrate, i.e. a nutrient solution; inoculating probiotics into the nutrient solution at 30-32DEG C, performing mixed fermentation in four stages, and conducting quality detection, thus obtaining a drink. The method provided in the invention adopts a plurality of plants to serve as a nutrient solution culture medium, takes a compound probiotic as a conversion tool, and employs multistage liquid submerged fermentation. Toxic and harmful matters in the raw materials can be degraded, new active compounds can be formed, protease and glucoamylase are produced during fermentation, so that the flavor of the original material product can be improved. The phytic acid in plants is converted into functional lactic acid and acetic acid, and insoluble fiber is converted into soluble dietary fiber and the like. The prepared product can activate a variety of enzymes in the human body and comprehensively regulate human body metabolism.
