Saccharomyces unisporus is a yeast which vigorously ferment only some monosaccharides, one of which is the galactose. It gives rise to more slow and less clean alcoholic fermentation than Saccharomyces cerevisiae, since it produces larger quantities of minor compounds such as glycerol, succinic acid, acetic acid. Saccharomyces unisporus is a low alcohol producer, it cannot bring the must fermentation to an end, in fact it halt at level of 7 vol % in ethanol. Only in milk whey is more competitive and produces clean alcoholic fermentation.
