Application of genomics tools in meat quality evaluation

Abstract The application of genomic tools for meat quality evaluation has been getting greater attention in recent years since they are fruitful techniques and also confirmatory as well. These techniques provide the added advantages of only requiring a small quantity of meat tissues with a greater degree of sensitivity and selectivity for a diverse array of samples. Diagnoses of a variety of diseases, contamination, and other health hazard articles are now key areas of research interest for the safeguarding of healthy individuals. This chapter is focused on meat quality analysis using the most important genomic tools, including polymerase chain reaction (PCR), real-time PCR, DNA sequencing, microsatellite analysis, agarose gel electrophoresis, polyacrylamide gel electrophoresis, two-dimensional gel electrophoresis, and Western blot.
