The invention discloses a cultivation method for adjusting and controlling the fruiting time of oyster mushrooms. A wide-temperature oyster mushroom variety is adopted. Ordinary cultivation facilities and materials are used. Raw material cultivation, fermented material cultivation and sterilized material cultivation can be selected and used. After a cultivation hypha bag is made, hypha is cultivated. After the hypha grows and is filled in the hypha bag, the opening of the hypha bag is closed, and the hypha bag is stored in a room, wherein the temperature difference of the room is low, the day-and-night temperature difference of the room is small, the room is sealed, dried, dark, airless and lightproof, and the hypha bag is sealed and stored within one year. When fruiting time comes, the sealed and stored hypha bag is moved to a fruiting room ventilating and scattering light under the temperature above 5DEG C, fruiting is managed, and the oyster mushrooms can appear on the market after 10-15 days later or so. The hypha sealing and storing method is selected and used, fruiting can be conducted according to requirements at different times, material storing is replaced by hypha storing, the supply problem of fresh edible mushrooms is relieved, and equipment and costs for storing fresh mushrooms and dried mushrooms are reduced.
