Identification of novel angiotensin‐I converting enzyme inhibitory peptide from collagen hydrolysates and its molecular inhibitory mechanism

The peptide Gly‐His‐Val‐Gly‐Ala‐Ala‐Gly‐Ser (GHVGAAGS) identified from the fish collagen protein hydrolysates exhibited potential angiotensin I‐converting enzyme (ACE) inhibitory activity. The ACE inhibition mechanism of GHVGAAGS may be related to the release of the GH, VG, AA, and GS fragments, and the binding of peptides to ACE.
