The invention relates to a preparation method of a buckwheat health-care product. The preparation method comprises the following steps of 1 utilizing alpha-amylase to perform enzymolysis of buckwheat starch slurry so as to obtain a buckwheat starch enzymolysis product; 2 mixing the buckwheat starch enzymolysis product and auxiliary ingredients to obtain a raw material mixture; 3 processing the raw material mixture to produce a powdery buckwheat health-care product. In the optimized method, the enzymolysis process is that the pH of 10%-40% by weight of buckwheat starch slurry is adjusted to be 5.0-6.2, the alpha-amylase for 0.01%-0.5% by weight of buckwheat starch slurry is added into the buckwheat starch slurry, and the vitality of the alpha-amylase is higher than 20000 u/g. The enzymolysis temperature ranges from 55 DEG C to 85 DEG C, and the enzymolysis time ranges from 1 hour to 6 hours. Enzyme deactivation is conducted on the buckwheat starch slurry after enzymolysis is completed, the enzyme deactivation temperature ranges from 85 DEG C to 135 DEG C, and the enzyme deactivation time ranges from 15 seconds to 300 seconds. The buckwheat starch slurry subjected to the enzyme deactivation is filtered by using a filter with 100-200 meshes to obtain the buckwheat starch enzymolysis product. The buckwheat starch enzymolysis product is subjected to blending, homogenization, sterilization, concentration, drying and other processes to produce the buckwheat health-care product.
