Chapter 10 – Fruit Brandies

This chapter presents an overview of fruit distillates, describing the different types of distillates according to type of fruit: pome fruits, stone fruits, and berries, as well as the basis of their legal characteristics, distinguishing alcoholic beverages by fruit brandies, distillates obtained from macerated fruits, and liqueurs. Brandies of traditional fruits are analyzed, such as those obtained from pears, apples, cherries, and plums, as well as brandies from less common fruits such as melon, kiwi, and mango. Finally, this chapter analyzes the potential of berries, especially their possible use in the production of liqueurs.
