Smart System of Raw Meat Acceptance Control for Automated Continuous Meat Product Production Lines

This paper discusses the possibilities of creating a domestic acceptance control system (ACS) for raw meat with advanced functionality without using manual labor. The data on raw meat (frozen blocks) ground by cutters of different designs and geometry have been studied. Microstructural analysis has shown a large variance in the thickness and width of meat shavings (depending on the raw meat temperature and cutting mode). To reduce the variance of shavings, a reasonable adjustment of the cutting tool rotation frequency was used. The obtained results have allowed to create the raw meat ACS procedure. An intelligent approach in the algorithm was determined by analyzing the criteria (meat temperature in the contact zone of the cutter with the block and the surface of the “tail” part of the block, the chemical composition of the minced meat, etc.), with the help of which the control computer sets the values of the operating parameters of the raw meat cutting process. To ensure high efficiency, the system has a sensor detecting the impurities in raw meat and their locations. The developed ACS allows using a highly efficient “unattended technology” in the production of meat products of mass consumption with guaranteed quality.
