In article the basic directions of protection the organism of workers at sulphatic and road-building manufactures of Altay Kray from professional risks by means of functional preventive food are presented. The hygienic substantiation of catering services for persons, working in harmful trades, on the basis of optimization the actual diets with introduction the quality new foodstuff with directional change of the chemical composition corresponding to requirements of workers in the conditions of adverse action of ecological and industrial factors are presented.
