The Relationship between Slaughterline and 24-Hour Measurement of Pig Meat Colour and Light Scattering by the use of Hennessy Grading and Fibre Optic Probes

The Hennessy Grading System is now used in Sweden for the commercial grading of meat content. An experiment was performed to discover if the Hennessy Grading System could also be used to predict the final meat quality from slaughter line measurements.
