The invention discloses a method for producing poly(malic acid) and pullulan together by using Aureobasidium pullulans. The invention relates to a method for producing poly(malic acid) and pullulan by using Aureobasidium pullulans, belonging to the technical field of the bio-fermentation engineering. The method comprises the following steps: reducing the temperature of the culture medium of a fermentation tank to 28 DEG C, inoculating a strain in the fermentation tank according to the inoculation quantity which is 3%, stirring under the conditions that the rotational speed is 200rpm and the ventilation rate is 0.5VVM, controlling the temperature to 28-31 DEG C to begin fermentation, performing the fed-batch of sucrose after 24 hours to control the content of sucrose in the fermentation liquor to 35g/L, controlling the temperature to about 25 DEG C after 72 hours, continuously performing the fed-batch of sucrose to control the content of sucrose in the fermentation liquor to 15 g/L, fermenting for 136 hours to stop adding sucrose, continuously fermenting for 8 hours when the content of sucrose in the fermentation liquor is reduced to 0, controlling the pH value to 5-7.2 in the fermentation process, and fermenting for 166 hours. By adopting the method disclosed by the invention, the raw material utilization rate can be increased, energy can be saved and the cost can be reduced.
