stable liquid and fractionated oils. The present invention relates to a liquid fraction and stable oil obtainable from sunflower oil and high oleate highly saturated (HOHS). The oil is characterized olein because it is a fraction of the oil HOHS comprising less than 8.6% of SMS triglycerides, and over 26% of triacylglycerols SMM, wherein the formula reflects the three fatty acids containing triacylglyceride, the fatty acid sn-1,3 are the two external characters and S represents a saturated fatty acid and M represents a monoenoic fatty acid. These oils are not hydrogenated oils are liquid and resistant to oxidation and especially useful in culinary applications.
