Water-free aldoses may be prepared by mixing aqueous starch degradation products having 50 to 85 wt % solid matter content with (a) 0,1 to 5 wt % of a primary alcohol having 8 to 22 carbon atoms and (b) 0,1 to 5 wt % water-free glucose, with respect to the dry substance. The mixture is then dehydrated in a turbine dryer with rotating components down to 0,1 to 2 wt % residual water content. The water-free aldoses are suitable for example as reactive starting material for the preparation of alkyl and/or alkenyl glycosides.
