The effect on viscosity of different proportions of Hemkold 210 stabilizer in powder mixes for preparing vanilla-flavored milk shake and ice cream, at 35 % solids concentrations, were studied. Different mixes were prepared by mixing the ingredients in powder form. The selected product, with 1,2 % stabilizer, showed good sensory acceptance, adequate viscosity and a shelf life of 90 days at room temperature.
