The study productivity and biochemical parameters were describing a degree of stability of sorts wheat. The structural analysis spike of the ripened plants wheat of sorts Zafar and Alex depending on conditions of water supply shows, that at an optimum regimen of humidity in ground (control) and in conditions of drought soil (experience) the sort Zafar had appreciable advantage in comparison with a sort Alex. Is shown, that in conditions of a soil drought the contents of starch and protein in a grain decrease.
