Estudio comparativo de las variables tecnológicas en la industrialización de carpa (Cyprinus carpio)

Chemical, technological, and economic parameters for processing wild common carp (Cyprinus carpio) from continental waters in Buenos Aires Province (Argentina) were determined. The influence of the raw material quality on proximate composition, processing yield, labour productivity, and total operating costs was studied altogether with marine species like hake (Merluccius hubbsi ) and cod (Gadus morhua) processing. For the carp pre-spawning season, the heading and gutting yield (59%) and labor productivity (94kg/h) show the lowest values, and the variable production cost increased 13%. The results hereby presented are useful for improving the development of inland fishery activity.
