The invention relates to the technical field of processing of agricultural products, in particular to a sausage and a preparation method thereof. The sausage is prepared from the raw materials as follows: pork, salt, glutinous rice wine, monosodium glutamate, white sugar, Chinese prickly ash and vanilla powder. The preparation method comprises steps of cleaning, mixing, sausage filling, air drying, baking, cooling and packing. The sausage does not contain any artificial and/or synthetic antioxidant and the intrinsic anti-oxidation and sterilization effects of the vanilla are adopted, so that the oxidation of fat in the sausage can be inhibited, the use of a chemical synthetic antioxidant is avoided and the edible safety of the sausage is improved. Moreover, as the vanilla is added into the sausage provided by the invention, the appetite of eaters can be increased, the abundant eating joy is achieved, and a certain food therapy is realized.
