The Application of HACCP in the Production of Cheese

Based on the hazard analysis in the production of cheese,this essay studies the application of HACCP in producing cheese,introduces the quality problems,determines critical control points,and formulates a HACCP program of correspond-ing control value and monitor system,in order to provide reference to the application of HACCP system in cheese processing.
