The manipulation and processing of carcasses in slaughterhouses reveals itself as a main source of microbiological patogenic and saprophyte contamination affecting the carcasses. We have installed a microbiological control-system to establish safety plans concerning hygiene and public health aspects, and to verify with that the accuracy of the processes and to find out possible variations. On the other hand, regarding that in Europe (4), as well as in our country (3), determines that the slaughterhouses and halls must regularly control the general hygienic level of both installations, products and production conditions with microbiological analyses, we understand that there is really a legal need for carrying out these controls. In fact this is our major purpose, to contribute with our investigation to the public-health exigences.
