Bacteria Flora and the Hygienic Quality of the Starched Grass Carp

The mass-ratio for the starched grass carp of salt to starch,water,grass carp is 1:3:12:75.With the starched grass carp stored at 4℃,the results show that TVBN content is more than 15 mg/100 g,pH value is 7.0,the total number of bacteria is 1.2×10~7 CFU/g for 96 h,and the starched grass carp begins to decompose.Further study shows that the bacterium flora is constituted by Bacillus,Pediococcus,Moraxella and Staphyloccus,and Moraxella is the dominant bacteria.Accordingly,the shelf-life of these food is 72 h at 4℃.
