Analisis Higiene Sanitasi Makanan di Pondok Pesantren Putri Al-Ittifaqiah Indralaya Kabupaten Ogan Ilir Tahun 2020

Health conditions in Islamic boarding schools still require attention from various parties concerned, both in terms of access to health services, healthy behavior and environmental health. Food sanitation hygiene in Islamic boarding schools is an important part to prevent the occurrence of food-borne diseases in female students. This study aims to analyze the application of food sanitation hygiene at Putri Al-Ittifaqiah Indralaya Islamic Boarding School. This type of research is a descriptive qualitative research. The results showed that food hygiene sanitation management at the stage of receipt of food ingredients, storage of food ingredients, cooking utensils and cutlery used, personal hygiene handlers, the stage of food processing, transportation of processed food, serving food, and the number of germs on six tableware did not meet the requirements health based on Republic of Indonesia Minister of Health Regulation No.1096 of 2011. The conclusion of this study is that food sanitation hygiene in Al-Ittifaqiah Islamic Boarding School is still low due to indications of germ contamination of food through the cutlery used. Therefore, efforts are needed to increase supervision, examination and counseling for female and female students as well as providing facilities to achieve food security in pesantren.
