The fact of the vacuum packaging increasement in the cheese factories included in the D.O. Queso Idiazabal, has caused the discussion of its effects, advantages, functions, optimal use conditions... In the following study, the evolution of the physicochemical and microbiological parameters of Idiazabal cheese traditionally and vacuum packaged ripened were compared.
