The invention belongs to the technical field of food processing and particularly discloses a processing method for fresh wet semen cassia noodles. The fresh wet noodles are prepared by the following steps: by weight percent, taking 20-25% of ultrafine semen cassia powder, 30-40% of flour, 1-3% of salt, 1-1.5% of sodium carbonate, 0.2% of vegetable gelatin and water as raw materials, and performing working procedures of kneading dough, curing, tabletting, cutting into strips, stewing, washing with water, packaging, performing sterilization at a high temperature for a short time and the like. The obtained fresh wet noodles are sufficient in elasticity, good in stretching property, flexible, clear in soup, bright in color, free of sour taste and convenient to eat, have healthcare effects of nourishing liver, improving eyesight and the like, and are low in production cost, simple in process and relatively high in application and promotion values.
