Progress of microbial transglutaminase - a super binding agent

Microbial transglutaminase(MTG) is a kind of important enzyme that can catalyze transferring e-amidocyanogen of lysine and γ-hydroacylamino of glutamic acid and promote polymerization of proteins through intermolecular cross-links.Functional characteristics of protein then can be changed and this has great potential in application.Reaction mechanism,physiochemical properties and present development progresses of MTG were reviewed,and its binding properties to different proteins and application in food processing were emphasized discussed,as well.
