The invention relates to the technical field of foods, and particularly relates to a garlic essential oil extraction method. The garlic essential oil extraction method comprises the following steps: (1) a raw material treatment step; (2) a first-time extraction step, namely a liquid-liquid extraction step for preparing crude garlic oil, namely a crude product 1; (3) a secondary extraction step, namely a subcritical extraction step for preparing a crude product 2 and a crude product 3; (4) a garlic essential oil particle preparation step: oil-like garlic essential oil is prepared into garlic essential oil particles by virtue of a gas saturated solution particle technique, namely a garlic essential oil finished product is obtained. The method disclosed by the invention has the advantages that 1, by adopting double times of extraction, the method greatly increases the content of the garlic essential oil in the crude products; 2, the secondary extraction is subcritical extraction of which the efficiency is obviously increased by more than five times; 3, by adopting a PGSS technique in the subcritical extraction, the problem of extracting agent residues is well solved, spicy and niffy smells in the garlic essential oil are removed as well, and the purity and quality of the product are greatly improved.
