Analysis of physico-chemical properties of Polyrhachis vicina Roger.

Main nutritional ingredients of Polyrhachis vicina roger were determined.Results showed that Polyrhachis vicina roger containing 54.51% protein and 43.91% amino acids in which essential amino acids accounted for 32.49% and essential amino acid index was 0.97,indicating that Polyrhachis vicina roger could be used as a high quality protein source.Inductively coupled plasma mass spectrometry showed that Polyrhachis vicina roger was rich in mineral elements,especially for K,Fe,Ca,Mg and Na.Coomassie brilliant blue was employed to determine the change of soluble protein at different pH.Increased soluble protein content was found under alkaline and acid conditions,which was higher in alkaline conditions than in acid condiitons.Flavor components of water extract were determined by Headspace and Gas Chromatography-Mass Spectrometry,36 compounds of 14 varieties were found.The main volatile flavor compounds were some small molecules with C2-C13 which were alcohol,aldehydes,and amine.Polyrhachis vicina roger was nutritive with application potential.
