Andlysis of Flavor of Eucalyptus Honey and Litchi Honey

A gas-stripping device was used to purge and trap the flavor volatiles of eucalyptus honey and litchi honey with Amperlite XAD-2 resin as adsorbent.The concentrates were then analysed by GC/MS/DS on SE-54 and OV-225 FSOT columns.Dual-column retention index measurement of the sample and authentic standards were used to confirm the indentification.2-methoxy acetaldehyde(19.51%)and benzaldehyde(19.49%)were found to be the major flavor con-tributing substances in eucalyptus honey,whereas linalool oxide(53. 78%+225.34)the major ones in Litchi honey.The uncomfortable odor of encalyptus hon-ey is due its high contents of various aldehydes and acetals.
