Study on extending storage of Mozzarella cheese packed in various materials.

The paper studied on how to extending storage of Mozzarella cheese.The ripened cheese was packed in various materials(PVDC、 PVC and PE),and refrigerate at 4 ℃.The change of water content,pH value,titratable acidity,soluble nitrogen,texture properties of un-melted cheese and functional properties of melted cheese were measured interval 7 d during stored periods.By analysis the data of experiment,we could got that PVDC group storage after 49 d got the same result with the control storage after 28 d,PVC group storage after 49 d got the same result with the control storage after 35 d,both could effectively extend the storage of Mozzarella cheese.
