The invention relates to an enzymolysis extraction method for an oyster extract. The oyster extract is subjected to enzymolysis by using papain to generate polypeptide. The preparation method comprises the steps of enzyme dissolving, pH value adjustment, enzymolysis, enzyme deactivation and the like. The enzymolysis extraction method has the advantages that: firstly, a product is characterized in that amino acid comprises arginine as a main component as well as histidine and glutamic acid as secondary components. The polypeptide molecular weight of the product is mainly centralized below 8000Da, wherein mostly about 85 percent of the polypeptide molecular weight is below 1400Da; molecular weights of various peptides are relatively centralized; and particularly, main low-molecular weight peptide has very high nutritive value; secondly, the enzymolysis extraction method is simple in operation and low in cost; thirdly, the enzymolysis extraction method is safe, reliable and free of pollution to the environment; and fourthly, the enzymolysis extraction method has stable yield and very high application value and is suitable for industrial production.
