Izolace mikroorganizmů degradujících biogenní aminy

Use of microorganisms able to degradation of biogenic amines or biogenic amines oxidi-zing enzymes, offers another opportunity to reduce their levels in the foods, in cases where is difficult to control their production. In the practical part of thesis were isolated 44 microorganisms with degradation activity of biogenic amines. Isolated degraders were identified by MALDI-TOF mass spectrometry. From the isolated degraders were selected seven isolates with which has been continued in the experiment. It was monitored degradation of 6 biogenic amines in time. The highest degradation activity was noted with isolate Bacillus subtilis, for which was examined the effect of selected factors on the degradation activity. The tested combinations of factors (pH of medium, temperature and aeration of culture medium) significantly did not affect the degradation activity. All of biogenic amines were degraded by 65 to 85%. In another experiment was done a pilot screening of degradation biogenic amines by diamine oxidase.
