The invention relates to a fried pickled vegetable product and a preparation method thereof. The fried pickled vegetable product is characterized in that: salted green vegetables and tuber mustard after being washed, cut, desalted and dehydrated are adopted as main raw materials, pickled roots of coriander, pickled hot peppers, pickled gingers, pickled garlic, fresh garlic and the like are adopted as auxiliary materials, then flavorings such as monosodium glutamate, chicken essence, I+G, lemon acid and the like are added, salad oil is added into a frying pan to fry the vegetables, and then the fried vegetables are packed and sterilized to obtain the product. The fried pickled vegetable product is fresh and delicious, has a special fragrance of a fried product, and also has a fresh and cool flavor of the traditional pickled vegetables.
