In this work is presented the development of a new product, Tomato Jam. It is made with tomatoes (Licopersicum esculentum) which are not commonly used as ingredients in products such as marmalades or jams. This work started in the kitchen trying with different formulations, then in a semi industrial plant. The outcome is the final formulation for making quality analyses. As a result, the product complies with the official standards required for jams.
