The research results on processing berry and vegetable raw materials in Krasnoyarsk region are given in the article. New kinds of the combined purees on the basis of the paste of topinambur show high availability of the biologically active substances and the low sugar availability. It allows to use them for dietetic nutrition as an independent product, and as the fillers for the new kinds of functional products.
