Other emerging gums: Flaxseed gum, yellow mustard gum, and psyllium gums

Abstract There are numerous emerging gums that have commercial potential and can be considered to have credentials as natural gums for clean labeling. This chapter focuses on recent advances of three seed coat mucilages: flaxseed gum, yellow mustard gum, and psyllium husk. Studies on their physicochemical and functional properties (rheological properties, emulsification properties, etc.), structural features, and health benefits are reviewed. Their structural and functional relationships are herein discussed, which help to facilitate their future application in both food and industrial fields.
