The invention provides yeast and a method for fermenting Pu'er tea by utilizing the yeast. The yeast comprises the following raw components in mass ratio: 15-30% of cordyceps militaris, 10-40% of gastrodia elata and balance of tea; 60-80% of tea, 15-30% of cordyceps militaris and balance of water are uniformly mixed, stacking and fermenting are carried out, oxidation reduction is taken place on polyphenol material, protein, starch fiber and the like in cordyceps fungi, gastrodia elata fungi and the tea, thus the fermented Pu'er tea can produce more fungi polysaccharides and theabrownines, health care effect is outstanding, quality is more ideal, and the obtained Pu'er tea contains 15-17% of tea polyphenol, 8.6-11% of tea polysaccharide and 18-25% of theabrowins and has special smell of the cordyceps fungi.
