The growth interaction between lactic acid bacteria and yeast in fermentation milk

Various interactions between lactic acid bacteria and yeasts were investigated.In details,the growth of lactic acid bacteria during fermentation was inhibited by the addition of Saccharomyces cerevisiae.The addition of lactic acid bacteria advanced the growth of Saccharomyces cerevisiae and Kluyveromyces marxianus.A positive interaction between Saccharomyces cerevisiae and lactic acid bacteria was observed during cold storage to improve the viability of each other.
